Pour Light Caesar
dressing into a bowl, mix in Romaine lettuce, leftover cut up chicken, croutons
and parmesan cheese. You can also add in cherry/grape tomatoes and olives. Mix well. Serve on plates and top with more
parmesan cheese and fresh pepper.

Berry Salsa
Combine in a bowl:
1 cup raspberries, 1 cup blueberries, 1 cup blackberries, 1 cup strawberries
(cut up) and ¼ cup chopped cilantro, toss lightly. In another bowl combine: 2 Tablespoons of
sugar, 1 teaspoon of honey, 1 teaspoon of lime juice and 1 teaspoon of cider
vinegar. Pour this mixture over the
berries and toss lightly. Serve with cinnamon chips, pita chips or tortilla
chips.

sideways to make a flat, round circle for the face. Use a drop of yogurt to secure two raisin
eyes and one raisin nose. Break a small

apple in long thin, pieces for the whiskers and use yogurt to secure.

Combine 1/3 cup
Chia seeds, 1 ½ cup vanilla soy milk, 2 Tablespoons maple syrup and ½ teaspoon
vanilla in a jar with a lid and shake.
Chill for 30-60 minutes. Shake it
again and chill again for 4 more hours.
Chia seeds will expand and turn into pudding. Serve cold and top with your favorite fruit
and coconut flakes (optional). You can make it before school then eat it as an
afterschool snack!

Spread raspberry
jam onto a piece of whole wheat bread.
Slice a banana into thin slices then cut slices in half to make half
circle shapes. Place blueberries into 3
rows of 3 at the top left corner of the bread.
Use the banana slices to make the stripes. Make sure that you can see
the jam into between for the red stripes.

Mix 2 teaspoons of cream cheese and 3 teaspoons of marshmallow fluff
until smooth. Spread half of the cream

the graham cracker. Arrange bananas and
strawberries on top of the graham.

Stir ¼ cup apple
cider vinegar, ¼ white sugar and ¼ cup olive oil in a bowl. In a separate bowl mix one 15 oz. can of
black beans (drained & rinsed), one 11oz. can of corn (drained), 4 oz. Feta
cheese crumbles and 5 chopped green onions.
Pour dressing over mixture and toss together. Refrigerate for 1 hour. Add cilantro for garnish and serve with
tortilla chips.

a dab of yogurt (mayo) and top with another vanilla wafer (bun). Add another dab of yogurt to the top and
sprinkle with oats. Cut apple slices to
make “fries”.

Take ½ of a bagel and cover it with low fat cream cheese. Place pineapple chunks around the top for the clown’s hair. Add blueberries for the eyes, strawberries for the nose and bow then an apple slice for the smile.

Put a Ritz cracker on a plate then unwrap a Babybel cheese and put it above the cracker. Use a drop of cream cheese on 3 raisins and put on top of the cheese for the eyes and nose. Put a drop of cream cheese on 4 thin carrot sticks to use for whiskers. Use 2 apple slices for the ears.
Jiovanni DeChicchis’ Black Bean Salsa
Mix in a bowl: 1 can of black beans, 1 can of corn, ½ cup chopped bell pepper, ½ cup chopped cilantro, 8 chopped green onions, 3 tablespoons of lime juice, 2 tablespoons of balsamic vinegar, ½ teaspoon cumin and ¼ teaspoon of salt. Serve with tortilla chips.

Crush Minion graham crackers in a baggie. Slice a banana. Put some of the crushed graham crackers into a cup, layer banana slices and banana yogurt on top then repeat. Stand two Minion graham crackers on top.
